Sardine Fry Recipe (Mathi Porichathu) | Dubai Diaries - Introduction
Hi everyone, so this is my journal of trying a fish dish for the first time since I moved to Dubai. This is also my first time preparing a written journal of my cooking journey. So welcome to my Humble Abode.
Context
So the other day, I was going along with my usual stroll through the supermarket when I came across a school of sardines laying on ice. Initially, I was about to buy Mackerel but changed my mind at the last moment. It was 8:30 in the morning, and the sight of the fresh sardines on display seemed like an invitation I couldn’t resist. They looked so fresh and shiny, their scales almost sparkling under the fluorescent lights. The vibrant fish looked like they were calling out for some culinary attention, so I grabbed a pack. A small smile spread across my face as I imagined the delicious flavors I could bring out from these small but mighty fish.
In my home country, I remember my mom preparing Mathi Porichathu (Sardine Fry) almost every week, and I used to love it! The crispy, spicy exterior with the tender, juicy flesh on the inside was always a treat. With my new home in Dubai and my new kitchen, I thought it was about time I recreated that dish for myself — and hopefully, for some friends who’ve never tasted it before.
I wasn’t entirely sure about the specific ingredients and spices I had available here in Dubai, but the excitement of trying out this familiar recipe with a slight twist was more than enough to push me forward. So, I went ahead and decided to experiment with what I had. It’s the perfect way to start this food journal — a dish that holds so many memories for me.
